Black garlic has become a highly sought-after product over the past decade, but its use dates back more than a thousand, until the ancient Egyptian society. Today it is a widely consumed product in places throughout Asia, where it is part of the ancient culture of China or Thailand, having been used for centuries in traditional medicine.

Garlic is one of the species most used by humanity as a natural remedy, highlighting its traditional uses as a cardio protective and promoter of the immune system.

However, it is black garlic that appears to have unbanked its younger brother in the nutraceutical sector, and this is due to changes in the molecular composition of garlic as it ages to obtain the coveted black garlic. During this process, some of the most unstable molecules of white garlic (responsible for the unpleasant effects associated with garlic, such as odor) turn into compounds of greater stability, and that provide a number of benefits to be considered.

This is the case with SAC (S-alyl-cysteine) which is a compound derived from allicin, only obtainable by aging white garlic. The stability and bio accessibility of SAC, as well as its high antioxidant capacity, make it a molecule with protective cardio properties, capable of combating cellular oxidative stress.

Black garlic has shown to have a polyphenol content 10 times higher than white garlic, placing itself as a 2.0 version of it, providing greater antioxidant and cardio protective capacity.
